My daughter’s friend, Patricia, graduated from elementary this week and we attended her graduation rites at Mother Goose Playskool and Grade School. After that, Patricia’s parents invited us to their home to have dinner so the kids can catch up with each other. I loved the dinner but what I liked the most was Tita Benny’s leche flan. It was so good that I had to ask her for the recipe. It’s so cheap but believe me it will make anyone’s mouth water. Let me share it here with you:
Combine 1 evaporated milk (about 250 ml) and 120 ml condensed milk. Add in 4 fresh whole eggs and mix for 1 hour. Be careful not to introduce air while mixing so the flan will not have holes in them when they’re cooked. Add in 1 cup sugar till dissolved. Pass this mixture through as sieve and put in molds with caramelized sugar (see my previous recipe for this). Cover each mold with aluminum foil and cook via baine marie or steaming for 1 hour. serve cool.
You can put these flans in a plastic and then package them in nice boxes. I’m sure customers will be buying repeatedly.
